Start your day off with this delicious combination of soft scrambled egg and spicy chili flake.

  1. Spread mayonnaise on the cut side of the bread after halving it
  2. Whisk eggs, milk, and chili flakes in a large bowl with a fork until combined. Allow the foam to settle for a couple of minutes.
  3. Heat a medium-sized nonstick frying pan on medium heat. Butter, melt in a pan, and swirl it to coat the base. Add the egg mixture to the pan and cook for 30 seconds without stirring.
  4. Use a large spatula to push the eggs set around the outer edge of the pan toward the center, tilting it to allow the uncooked yolk to flow over the bottom. Gently move eggs around the pan every 15 seconds until soft folds appear, and one-quarter of the mixture is still unset. Remove the pan from the heat.
  5. Fold the egg mixture gently a second time. Divide scrambled egg and rocket between the bread. Season to taste.
