With an egg, leftover veggies are a great breakfast!



  1. Heat oil in a medium-sized nonstick frying pan on medium heat. Toss the roasted vegetables into the pan and cook for 4-5 mins, until they are hot and crispy at the edges. Add peas, and warm on low heat.
  2. Spray oil on a medium nonstick pan to grease. Heat over medium heat. Fry eggs in a pan until desired. Serve vegetables with fried egg, seasoning, and seasoning.
