This recipe for potato rosti with a cheese melt that is packed with flavourful ingredients makes a great brunch dish.



  1. Squeeze out any moisture from the grated and peeled potato. Add butter to the large bowl. Add salt and pepper.
  2. Oil in a medium-high heat frying pan. Portion potato mixture into small handfuls and place in pan. After 3-4 minutes, turn each Rosti to ensure they are golden brown on both sides.
  3. Top Rostis with Perfect Italiano Perfect Melt. Place under the grill or in an oven until the cheese is melted. Remove from the oven and serve immediately.
