Oats that are dairy-free overnight are made from nectarines and apples. Easy summertime, prepare breakfast in advance for the meals prep for the week.

- Chop roughly 1/3 cup almonds and then place them in the bowl. Add apple, oats rolled in a bowl, almond milk, sultanas, and currants. Stir until combined. Cover and place in the refrigerator overnight.
- Preheat oven to 200degC/180degC forced by fan. Cover a baking tray with baking parchment. Mix nectarine wedges with maple syrup in the bowl. Spread onto a baking sheet and cook for about 15 minutes or so until the nectarines are soft and golden. Spread the remaining almonds on an additional tray. Bake for 5 minutes more of cooking.
- Mix extra milk into porridge, if you prefer, and pour into bowls to serve. Decorate with roasted nectarines and almonds. Sprinkle with additional maple syrup.
