This easy pikelet is perfect for brunch, high tea, or weekend breakfast. Serve with fresh fruit and yogurt or ice cream and homemade chocolate sauce as a sweet treat at the end of the day.

- In a medium-sized bowl, combine the flour with sugar and salt. Add the egg and milk to a separate bowl and whisk together. Then, add the dry ingredients. Whisk until smooth
- Butter a nonstick frypan on medium heat. Drop tablespoons of batter in the pan and cook until bubbles appear. Then flip the pikelets and continue to cook until golden.
- Transfer the fried chicken to a dish and cover it with a towel to keep warm. Continue cooking in batches and brush the pan with additional butter before each set.
- Serve the pikelets slightly warmed or at room temperature, sprinkled generously with fresh berries.
