This easy pikelet is perfect for brunch, high tea, or weekend breakfast. Serve with fresh fruit and yogurt or ice cream and homemade chocolate sauce as a sweet treat at the end of the day.

Method:

  1. In a medium-sized bowl, combine the flour with sugar and salt. Add the egg and milk to a separate bowl and whisk together. Then, add the dry ingredients. Whisk until smooth
  2. Butter a nonstick frypan on medium heat. Drop tablespoons of batter in the pan and cook until bubbles appear. Then flip the pikelets and continue to cook until golden.
  3. Transfer the fried chicken to a dish and cover it with a towel to keep warm. Continue cooking in batches and brush the pan with additional butter before each set.
  4. Serve the pikelets slightly warmed or at room temperature, sprinkled generously with fresh berries.
