These pancakes make a wonderful recipe for babies aged between 9-12 months.
- In a medium-sized bowl, sift the flour and baking soda. Add almond meal. In a large jug, whisk together the eggs, vanilla, and milk. Add the egg mixture to the flour mixture and whisk well until combined.
- Spray a large, non-stick pan lightly with oil. Heat the pan over medium heat. Pour four mini pancakes by spooning tablespoons of the batter into the pan. Cook each side for 1-2 minutes or until golden. Repeat the process with the remaining batter, making 12 pancakes. Spray with more oil if necessary.
- Serve pancakes with yogurt mixed with mashed banana and blueberries.
- If desired, sprinkle a pinch of cinnamon over the top.
