These pancakes make a wonderful recipe for babies aged between 9-12 months.

Ingredients:

Method:

  1. In a medium-sized bowl, sift the flour and baking soda. Add almond meal. In a large jug, whisk together the eggs, vanilla, and milk. Add the egg mixture to the flour mixture and whisk well until combined.
  2. Spray a large, non-stick pan lightly with oil. Heat the pan over medium heat. Pour four mini pancakes by spooning tablespoons of the batter into the pan. Cook each side for 1-2 minutes or until golden. Repeat the process with the remaining batter, making 12 pancakes. Spray with more oil if necessary.
  3. Serve pancakes with yogurt mixed with mashed banana and blueberries.
  4. If desired, sprinkle a pinch of cinnamon over the top.
