Try this egg and avocado breakfast for a quick and simple low-carb meal.



  1. The grill should be heated to high. Whisk the eggs and milk together in an oversized bowl. Add salt and pepper to taste.
  2. 2. Tbsp oil into a 20cm nonstick fry pan. Add egg mixture and cook on medium heat for about 3-4 minutes, until it is almost done. Sprinkle the omelet with cheese, and then place it under the grill for a couple of minutes until the omelet is golden and puffy.
  3. Mix avocado and tomato with lemon juice and the remaining one teaspoon oil. Sprinkle the avocado mixture, as well as half the herbs, over the other half of the omelet. Fold the omelet in half, then put it on a dish to serve. Sprinkle with the other spices.
