Cucumber Tomato Salad

  • Peel and slice two cucumbers
  • Two large tomatoes, sliced
  • One small red onion thinly sliced
  • Parsley chopped to 1/4 cup
  • Olive oil two tablespoons
  • Red wine vinegar, one tablespoon
  • Honey 1 teaspoon
  • To taste: salt and pepper


  1. Combine the chopped red onion, tomatoes, cucumber slices, and parsley in a large bowl.
  2. In a separate mixing bowl, combine the olive oil with the red wine vinegar, honey, and salt.
  3. Pour the dressing on top of the cucumber-tomato mixture and combine.
  4. Refrigerate the mixture for 30 minutes or more to let the flavors meld.
  5. Enjoy this delicious and healthy Cucumber Tomato Salad.

Note: You may customize this recipe with other ingredients like olives, feta cheese, or avocado.
