Ingredients:
- Peel and slice two cucumbers
 - Two large tomatoes, sliced
 - One small red onion thinly sliced
 - Parsley chopped to 1/4 cup
 - Olive oil two tablespoons
 - Red wine vinegar, one tablespoon
 - Honey 1 teaspoon
 - To taste: salt and pepper
 
Instructions:
- Combine the chopped red onion, tomatoes, cucumber slices, and parsley in a large bowl.
 - In a separate mixing bowl, combine the olive oil with the red wine vinegar, honey, and salt.
 - Pour the dressing on top of the cucumber-tomato mixture and combine.
 - Refrigerate the mixture for 30 minutes or more to let the flavors meld.
