A well-balanced morning meal keeps your mind active and sharp. Whereas, researchers found that skipping meal in the morning can lower your mental agility especially in youth and young adults.

In the morning, eating healthy meals like a bowl of whole grain cereals with low fat milk or yogurt, and throw in a few blue berries, raspberries or bananas can help you feel lively and refreshed for the rest of the day. A glass of low fat milk, healthy smoothies, coffee, hot cocoa or tea are good healthy drinks with your delicious homemade muffins, or a slice of your own banana bread.

Vitamins B, C, D and E help maintain a healthy mind. Here are some nutrients and the healthy foods in which they are found. Thiamin (B1): Whole grain cereals, legumes, nuts, lean pork, and yeast.

Scrambled eggs are one of the easiest and satisfying breakfast food that my family loves. This is the healthy recipe for this easy meal. It only takes 5 minutes to prepare and 5 minutes to cook. It serves 3. I use 4 eggs, 1/4 cup of skim milk, 1/4 teaspoon of salt (if desire) and a pinch of pepper to add taste if you are not using salt.

In a small bowl, combine the eggs, milk, and seasonings. Heat a skillet over medium or medium-high heat.

Spray the heated skillet with nonstick cooking spray. Immediately, pour the eggs into a frying pan and stir from the outside edge toward the center allowing the uncooked egg in the center to flow to the outside. Continue stirring until all the egg has cooked solid and has a creamy golden yellow appearance.

You can add lean ham and Swiss cheese to your scrambled eggs. Before adding the eggs to the skillet, brown 6 ounces chopped lean ham in 1 tablespoon olive oil, about 2 minutes. Transfer the ham to a small bowl. Wipe the skillet clean and put the eggs in, and do the same as the scrambled eggs recipe, quickly fold in the ham and 1/2 cup shredded Swiss cheese, and 2 tablespoons chopped fresh parsley or chives. (optional)
