Healthier rice pudding

  • 100g pudding rice
  • 750ml semi-skimmed milk
  • 1 tsp vanilla bean paste
  • Honey: 2-3 tablespoons clear honey, to taste
  • Serve four tablespoons of full-fat Greek Yogurt


  1. Pour the pudding rice into a large pan with the milk and vanilla paste. Bring to a simmer on low heat. Stirring constantly to ensure it does not stick to the bottom of the pan.
  2. Stir occasionally in the beginning but more frequently as the rice expands. Simmer until the rice is tender and creamy. Add 1 tbsp honey.
  3. Divide the yogurt between 4 bowls. Drizzle honey and add a tablespoon of yogurt to each. Then, swirl and serve.

  5. Rice pudding is a high-calorie treat that can be made healthier. The classic combination of cream and full-fat dairy milk has been replaced with semi-skimmed, while Greek yogurt is added at the end for that creamy texture.
