Ingredients
Organic 1 cup olive oil chicken cutlets Skin on
One onion chopped
1 1/2 teaspoons onion powder
One teaspoon sweet 1 1/2 teaspoons sweet
250ml Rosella Organic Tomato Sauce
Two tablespoons white vinegar two tablespoons white
405g can apricot nectar
425g can of apricot halves drain
700g of microwaved white rice (see suggestions)
Half cup chopped parsley is used to garnish, and additional to garnish
Method
- Preheat oven 220degC/200degC (fan-forced)
- Cook the oil in an oven-proof and large flameproof pan at medium-high. Sear the chicken for four minutes on each side. Transfer chicken to a large bowl, then place aside.
- Add the onion to the pan to cook for 3 mins until softened. In the pan, add onion powder pap, rika and vinegar, tomato sauce, and Apricot nectar. Bring to a boil. Reduce temperature to medium, and cook for another 8-10 minutes or until it has slightly thickened. Place in a bowl with chicken and clean the pan
- Place rice from the microwave into a pan, spreading it out evenly. Mix in parsley. Lay the chicken thighs over the rice and pour the sauce over. Bake for about 25 minutes. Add apricot halves, and cook for an additional 10 minutes. Sprinkle with parsley, and serve straight from the pan.
Can you make apricot chicken in a slow cooker?
This recipe is very easy to transform into a slow cooker dinner. Grill chicken thighs and add them to the slow cooker. Add the remaining sauce ingredients, excluding the apricots that have been rinsed, and cook for 3-4 hours at high or low for 5-6 hours.
