Ingredients:
- 8 oz udon noodles
- Two skinless and boneless chicken breasts, thinly sliced
- One tablespoon of vegetable oil
- Two minced garlic cloves
- Ginger, grated, one tablespoon
- Two tablespoons soy sauce
- Two tablespoons hoisin sauce
- 1 Tablespoon rice vinegar
- Sesame Oil, 1 Teaspoon
- Red bell peppers, 1 sliced
- Snow peas 1 cup
- Green onions, two slices
- Toast 1 tablespoon of sesame seeds (optional).
Instructions:
- Drain and set aside the udon noodles after cooking them according to the instructions.
- Heat the vegetable oil in a wok or large pan over medium heat. Cook the chicken strips until browned, about 5 to 7 minutes. Remove the chicken from the pan and place aside.
- Sauté garlic and ginger in the pan for 1-2 mins or until fragrant.
- Combine the soy sauce with the hoisin, rice vinegar, and sesame oils in a small bowl.
- Stir-fry the snow peas and red bell pepper for 3-4 mins, or until softened but still crisp.
- Add the chicken, the udon noodles cooked, and the sauce back to the pan. Stir-fry the chicken and udon noodles for 1-2 more minutes until heated. The sauce should be evenly distributed.
- If desired, serve hot with green onions sliced and sesame seeds toasted.
