Ginger Chicken Udon Noodles

Ingredients:

  • 8 oz udon noodles
  • Two skinless and boneless chicken breasts, thinly sliced
  • One tablespoon of vegetable oil
  • Two minced garlic cloves
  • Ginger, grated, one tablespoon
  • Two tablespoons soy sauce
  • Two tablespoons hoisin sauce
  • 1 Tablespoon rice vinegar
  • Sesame Oil, 1 Teaspoon
  • Red bell peppers, 1 sliced
  • Snow peas 1 cup
  • Green onions, two slices
  • Toast 1 tablespoon of sesame seeds (optional).

Instructions:

  1. Drain and set aside the udon noodles after cooking them according to the instructions.
  2. Heat the vegetable oil in a wok or large pan over medium heat. Cook the chicken strips until browned, about 5 to 7 minutes. Remove the chicken from the pan and place aside.
  3. Sauté garlic and ginger in the pan for 1-2 mins or until fragrant.
  4. Combine the soy sauce with the hoisin, rice vinegar, and sesame oils in a small bowl.
  5. Stir-fry the snow peas and red bell pepper for 3-4 mins, or until softened but still crisp.
  6. Add the chicken, the udon noodles cooked, and the sauce back to the pan. Stir-fry the chicken and udon noodles for 1-2 more minutes until heated. The sauce should be evenly distributed.
  7. If desired, serve hot with green onions sliced and sesame seeds toasted.
