This EASY Rice Pudding will be a hit with your family and friends.

As a kid, we called this rice dish milk rice because that’s what it was. In many countries, rice pudding is called milk rice.

Do not be intimidated if you have never made rice pudding. It’s easy to make, especially if you already have cooked rice. You can use this recipe for dessert or breakfast. It can be served hot or cold.

You and your children will love this pudding’s creamy, luscious taste.

Top the rice with cinnamon and some fresh fruit. It’s delicious, even with just cinnamon.

Only 3 Ingredients

This quick rice pudding recipe is different because we use leftover rice. This recipe is quick and easy to make. The result will be even creamier and better.

You will only need three ingredients to make this super easy recipe.

  • white short-grain rice Choose white short-grain rice
  • milk. I used whole milk, but you could also use some plant-based alternatives if your diet is dairy-free.
  • vanilla

  • How to make creamy rice pudding easily:
  • Add the milk, vanilla, and rice to a medium-sized saucepan.
  • Reduce the heat once the milk begins to get hot. Continue to stir with a fork continuously for 5-6 mins or until the milk has been absorbed almost entirely by the rice.
  • Remove the pan from heat and cover it with a lid. Let sit for 5 minutes.
  • Add cinnamon, butter, honey, or fresh fruit to the rice.

 

Can you eat rice pudding cold?

Yes! Yes! Put the rice pudding in an airtight container, and place it in the refrigerator for at least 2 hours. Enjoy with fresh berries.

This is the way I like to eat my pudding best.

MEAL PREP

You can make a large batch of cookies for 3-4 days.

  • Double the ingredients
  • Portion out the pudding in airtight containers. (I prefer to use jars).
  • If you like it warm, reheat it in the microwave with milk or water. (The rice can absorb a lot of milk and become sticky).
  • When it’s time for dinner, top your pizza with your favorite toppings!

Top Ideas

More straightforward is better! It’s best to keep it simple. Something light and sweet with just the right amount of sweetness will do.

You can use berries, cherries or apples, pears, or even tangerines cut up. These fruits have a slight acidity, which adds a lovely flavor to the creamy rice pud. The jam will also make an excellent topping!

EASY RICE PUDDING (WITH LEFTOVER RICE)

Ingredients

  • 1 cup cooked rice
  • 1 1/2 cup milk
  • 1 tsp vanilla

Additionally

  • Cinnamon
  • fresh fruit

Instructions

  1. Stir the rice with the vanilla and milk in a saucepan on low heat for about 5-6 minutes or until the milk has been absorbed.
  2. Cover the lid with a cloth and allow to sit for 5 minutes.
  3. Enjoy!

NOTES

You can also put the rice in the refrigerator to make a breakfast that is ready for you. If desired, top with nuts and fruit.
