This easy pancake recipe is perfect for children. It includes a tasty topping of strawberry compote and cream cheese.

- In a large mixing bowl, combine the baking powder with sugar and a pinch salt. In a large bowl, whisk together the eggs, milk and butter, if you are using vanilla. Make a well at the centre of all the dry ingredients, and then whisk in the milk mixture until you have a smooth batter.
- Over medium heat, warm a large non-stick pan that has been lightly oiled. Pour 1/4 cup of batter in the pan, working in batches of 3. Cook pancakes 1-2 minutes until bubbles appear on the top and bottom is golden brown. Flip the pancakes over and continue to cook for another minute
- Serve the pancakes with cream cheese spread on top and strawberry compote.
