Ingredients:
The crust:
- 2 1/2 cups all-purpose flour
- Sugar, 1 Tablespoon
- One teaspoon of salt
- Cold, cut into small pieces 1 cup of unsalted butter
- Ice water – 6-8 tbsp.
Filling:
- Peeled, cored, and thinly sliced apples.
- 2 Asian pears peeled and cored. Thinly sliced
- 1/4 cup of Granulated Sugar
- Light brown sugar, 1/4 cup
- 1/4 cup all-purpose flour
- Cinnamon, one teaspoon ground
- 1/4 teaspoon of ground nutmeg
- 1/4 teaspoon of salt
- Fresh Lemon Juice 1 Tablespoon
- Cut two tablespoons of unsalted butter into small pieces
- One egg, beaten
Instructions:
- Preheat your oven to 375degF.
- Combine the flour, salt, and sugar in a large mixing bowl.
- Use a pastry knife or your fingertips to cut in the butter until the mixture resembles coarse breadcrumbs.
- Add the ice-cold water one tablespoon at a time and stir the dough until it comes together.
- Divide the dough into two halves and flatten them each into a disk.
- Wrap the disks with plastic wrap and place them in the refrigerator for 30 minutes.
- Combine the cinnamon, nutmeg, and salt in a separate bowl. Add the apple slices, Asian pears slices, sugar granulated, sugar brown, and flour. Toss the ingredients together.
- Roll out one disc of dough onto a lightly floured surface into a large circle that will fit into a pie dish measuring 9 inches in diameter.
- Trim the edges and transfer the dough into the pie dish.
- Pour the apple-pear mixture into your pie crust.
- Spread small butter pieces on top of the filling.
- Roll out the second disc of dough, and cut it into strips with a pastry cutter or a knife.
- Arrange the strips in a lattice-like pattern over the filling.
- Brush the top of your pie with beaten eggs.
- Bake the pie at 350°F for 50-60 mins or until golden brown.
- Let the pie cool down before cutting and serving.
