Roast Pork Loin

For this easy healthy recipe, I like a boneless pork roast loin. Look for a lean cut blade or center loin roast to assure the best tasting results for this good healthy meal.

The beauty of roasting is not only for its ease but to keep the moisture in the pork roast so the juice is retained in the meat. The sliced pork comes out moist, juicy and outstanding! It is a great meal for dinner and we particularly like leftovers for our lunch meals. For breakfast, I substitute frozen sausages with a slice of the lean pork roast.

I recently read that lean pork contains Thiamin (B1) which is one of the important nutrients to help maintain or even improve our mental agility, especially in older adults. In contrast, diets high in trans fats are long known to harm the heart and blood vessels, so keep on eating healthy food for healthy mind!

Serves: 6
Prep Time: 10 minutes
Cook Time: 1 hour 10 minutes

Ingredients:

    1. 1 (2 1/2 – to 3 pound) boneless pork loin roast (make sure it’s tied together)
    2. salt (optional or use spice like garlic powder, sage, oregano, rosemary) and pepper
    3. 1 tablespoon vegetable oil

 

 

Adjust an oven rack to the lower-middle position and heat the oven to 375°F. Pat the loin dry with paper towels, then season with salt and pepper. Heat the oil in 12″ skillet over medium-high heat until just smoking. Brown the loin on all sides, reducing the heat after 10 minutes. Then transfer to a lined baking pan with foil, cook it for 50 to 70 minutes, until the roast registers 135°F on an instant-read thermometer, remove from oven and cover with foil for about 10 minutes. When the internal temperature reaches 145°F to 150°F that means it is done. Let it cool off and serve.

Tips: As soon as the roast pork reaches 135°F on your kitchen thermometer, remove it from the oven to avoid overcooking. Over cooked pork can become very chewy. We do not want pork jerky for dinner. It is a fantastic easy healthy meal when it is juicy!


Apricot Glazed Pork Recipe

Cook Time: 8 to 9 hours (LOW) * 4 to 5 hours (HIGH)

Ingredients:

    1. 1 can (10 1/2 ounces) Campbell’s Condensed Chicken Broth
    2. 1 jar (18 ounces) apricot preserves
    3. 1 large onion, chopped
    4. 2 tablespoons Dijon mustard
    5. 1 (3 1/2-to 4 pound) boneless pork loin roast

 

Mix broth, preserves onion and mustard in crock pot. Put pork roast to fit in the Slow Cooker. Cover and cook on LOW for 8 to 9 hours or on HIGH for 4 to 5 hours.
