Make a change to your egg-in-a-hole recipe by using this Mexican-inspired recipe. Serve it with corn salsa and chili sauce, perfect for Father’s Day

Method:

Egg in a Hole

  1. Spread each side of the bread with butter. Sprinkle cheese on the top of a large plate. Press in bread slices. Cut holes to spread cheese on both sides. Make use of a cutter that is 4cm long to make a hole in the bread slices.
  2. Make corn salsa and make use of the same pan to finish the steps in the recipe below:
  3. Pour oil into the pan, then cook slices of bread, making holes in them, for a couple of minutes or until the undersides have become toasty and golden, then turn over. Carefully crack one egg into each hole.
  4. Add salt and pepper on the egg cover, er the pan with a lid, and cook for 3-4 minutes or until the whites are set.
  5. To serve, pour corn salsa on the toast’s top and drizzle it with chili sauce. Sprinkle with coriander leaves If desired.

Corn salsa

  1. Cook a large non-stick frying pan on medium-high temperature. Add the corn, and cook for about 2 minutes, until the corn is bright yellow and the ledges begin to change to golden. Tip into a bowl. Mix in the remaining ingredients of salsa and put aside.
